This
appartment is named after a word from dialect used to
indicate large round handwoven
canvases with plaited strings on which the “sansa” (the
pulp left over from the crushed olives)
used to be spread. To squeeze all the remaining oil
from the olives, the “fiscoli” containing the
“sansa” were accurately pressed.
At the end of the olive season, the “fiscoli”
were hung to dry from the ceiling, to be ready for the next
season. This appartment was originally the large room where
the “fiscoli” were hung.
