This apartment takes its name from a word used in the local dialect indicating large round handwoven canvases with plaited strings on which the “sansa” (the pulp left over from the squeezed olives) used to be spread. In order to squeeze all the remaining oil from the olives, the “fiscoli” containing the “sansa” were accurately pressed. At the end of the olive season, the “fiscoli” were hung to dry from the ceiling, to be ready for the next season. This apartment was originally the large room where the “fiscoli” were hung.
